Absolutely! Just double the recipe for the shredded chicken so you’ll have enough meat to pile on the sandwiches and still make 8 servings. Also, substitute hamburger buns or sandwich rolls for the smaller slider rolls.
How many Servings does this Recipe Make?
I usually factor two sliders for a serving. If you are adapting the recipe to make sandwich-sized servings then I allow one sandwich per serving as well.
There are so many great sides to serve with this BBQ chicken recipe that two sliders or one sandwich usually is enough for each person.
Of course, if you have big eaters, then I would increase the recipe by 50%. The worst-case scenario is you have leftovers. But I think the chicken gets better the longer it sits in the sauce.
How Many Calories does a BBQ Chicken Sandwich Have?
Honestly, it depends on the size of the sandwich and the brand of barbeque sauce you use.
For these sliders, depending on how much you pile on, a serving of 2 sliders is about 583 calories. But that is with a lot of meat. This recipe makes more than 8 servings, but if you used all the meat for just those 8 servings it would be about that many calories as calculated using the nutritional calculator on the Very Well Fit website.
How much Chicken do I need for Pulled Chicken Sliders?
I use just about two pounds of chicken breasts for this recipe. It makes about 8 servings of sliders or 4-5 servings if you make the larger sandwich.
You can also use chicken thighs instead of breast meat, but I find that dark meat gets a little too greasy when slow cooked. But it’s really up to your preference.
If you want to make sure there’s plenty of chicken to go around, you can always use three pounds of chicken. Just be sure to increase the barbeque sauce as well!
What are the Ingredients for this Pulled Chicken Recipe?
To make this chicken slider recipe, you’ll need:
- Chicken breasts (skinless, boneless)
- Your favorite barbecue sauce. I used a Bourbon Barbeque sauce.
- Apple cider vinegar
- Water
- Large red onion
- Cumin
- Dark chili powder
- Extra Virgin olive oil
- Cabbage and carrot bagged coleslaw mix
- Mayonnaise — just a little
- Sugar — very little
- Celery seeds
- Salt and pepper
- Aloha slider rolls
- Dill pickle sandwich slices
It looks like a lot, but the recipe takes little active time.
How do I Make this Slow Cooker Shredded Chicken Recipe?
For the BBQ Pulled Chicken
- Set your slow cooker to high. Add barbeque sauce, apple cider vinegar, and water to the slow cooker insert and stir to combine.
- Heat olive oil in a non-stick pan over medium-high heat. Add onions and sprinkle with the cumin, chili powder, salt, and pepper (to taste) and sauté for 5 – 6 minutes. Add to slow cooker.
- Cut chicken breasts into six equal portions and nestle them into the sauce in your slow cooker.
- Cover and cook for 3 – 4 hours on high or until chicken reaches 165°F.
Coleslaw
- While the chicken cooks, mix the coleslaw ingredients in a medium bowl. Season to taste and refrigerate until ready to assemble.
Assemble the sliders
1. Remove chicken to a cutting board and shred with two forks. Return shredded or pulled chicken for the sliders to the slow cooker and stir to combine. Reduce heat to warm.
2. Remove slider buns from the package and cut them in half. Keeping the buns intact, place on a baking sheet cut sides up, and broil until lightly toasted, 1 – 3 minutes. Pull apart.
3. Top toasted slider buns with barbeque chicken, coleslaw, and dill pickle slices. Serve immediately.
You can also skip the coleslaw if your guests don’t like it. I usually set the pickles and coleslaw out and let my guests make their own sliders.
Alternative Grill Method for Pulled Chicken Sliders
If you are using your grill for the rest of the cookout foods, then why not use it for this recipe?
You can use your grill to reduce heating up the kitchen for parts of this recipe. Then let everything sit in a warm slow cooker until you are ready to serve the sliders.
Onions
Place the diced red onion in a piece of foil. Sprinkle 1 tablespoon extra-virgin olive oil, cumin, chili powder, and salt and pepper over the onions. Fold foil into a packet.
Grill 3 minutes per side or until the onions are a little charred and translucent. Add to sauce in the slow cooker.
Grilled Chicken
Sprinkle breasts with salt and pepper and grill over medium-high heat until 165°F in the thickest part of the chicken. Let rest 10 minutes before shredding and add to the barbeque sauce in the slow cooker. Combine and keep warm until ready to serve.
Slider Buns
Slice the entire package of buns in half. Place halves on the grill cut side down and lightly toast.
